Saffron Rose Lassi: A Creamy, Fragrant Drink Straight from Persian Paradise

Saffron Rose Lassi: A Creamy, Fragrant Drink Straight from Persian Paradise

The lassi is one of the world's great drinks — thick, cooling, and deeply satisfying. This Persian-inspired saffron rose version takes the classic yogurt drink and elevates it with two of the most beloved flavors in Middle Eastern cuisine: the floral luxury of saffron and the delicate perfume of rose water. The result is a drink that's as nourishing as it is beautiful.

It takes just 5 minutes to make and is perfect alongside spiced dishes, as a mid-afternoon refresher, or as an elegant non-alcoholic option at gatherings.

Ingredients

Serves 2 • Prep: 5 min (plus 20 min saffron bloom)

  • 15-20 threads of Milizo Saffron
  • 2 tablespoons warm water (for blooming)
  • 2 cups (480ml) full-fat plain yogurt (Greek or regular)
  • 1/2 cup (120ml) cold whole milk (or more for thinner consistency)
  • 2 tablespoons honey or sugar, to taste
  • 1 tablespoon rose water
  • 1/4 teaspoon ground cardamom
  • 6-8 ice cubes

For Garnish

  • A pinch of saffron threads
  • Crushed pistachios
  • Dried rose petals

Instructions

Step 1: Bloom the Saffron

  1. Add 15-20 saffron threads to 2 tablespoons of warm water.
  2. Steep for 20 minutes until deeply golden.

Step 2: Blend

  1. Add yogurt, milk, honey, rose water, cardamom, ice cubes, and the bloomed saffron liquid to a blender.
  2. Blend on high for 30-60 seconds until smooth, frothy, and a beautiful golden color.
  3. Taste and adjust sweetness or rose water to your preference.

Step 3: Serve

  1. Pour into tall glasses.
  2. Garnish with a pinch of saffron threads, a sprinkle of crushed pistachios, and a few dried rose petals.
  3. Serve immediately while cold and frothy.

Tips & Variations

  • Full-fat yogurt — gives you the creamiest, richest lassi. Low-fat yogurt will work but the texture won't be as luxurious.
  • Rose water amount — rose water varies in intensity by brand. Start with 1 tablespoon and add more to taste — it should be noticeable but not overwhelming.
  • Mango saffron lassi — add 1/2 cup of frozen mango chunks to the blender for a tropical twist.
  • Vegan version — use coconut yogurt and oat milk for a dairy-free version that's equally delicious.
  • Saffron is the star — the golden hue running through this lassi comes entirely from the saffron. With Milizo's Super Negin, even a small amount gives you that vivid, unmistakable golden color.

When to Serve It

This lassi pairs beautifully alongside our Saffron Chicken or Persian Saffron Lamb Stew — the cool, creamy lassi is the perfect counterpoint to rich, spiced mains. It's also wonderful on its own as a mid-afternoon snack.
