Few dishes are as impressive — or as easy — as a beautifully golden saffron chicken. The combination of saffron's floral aroma, bright lemon, and creamy yogurt marinade produces chicken that is incredibly tender, deeply flavorful, and a stunning golden color. This is the dish that will make your dinner guests ask for the recipe.
Ingredients
Serves 4
- 4 bone-in, skin-on chicken thighs (or a whole chicken cut into pieces)
- 25-30 threads of Milizo Saffron
- 3 tablespoons warm water (for blooming saffron)
- 1 cup plain whole-milk yogurt
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh herbs for garnish (parsley or cilantro)
Instructions
Step 1: Bloom the Saffron
- Add 25-30 saffron threads to 3 tablespoons of warm water.
- Steep for 20 minutes until deeply golden. This is the heart of the dish — don't skip it!
Step 2: Make the Marinade
- In a large bowl, combine yogurt, lemon juice, lemon zest, garlic, olive oil, turmeric, salt, and pepper.
- Stir in the bloomed saffron liquid.
- The marinade should be a gorgeous golden-orange color.
Step 3: Marinate the Chicken
- Score the chicken pieces with a sharp knife (2-3 cuts per piece) to allow the marinade to penetrate.
- Add chicken to the marinade and coat thoroughly.
- Cover and refrigerate for at least 2 hours — overnight is even better for maximum flavor.
Step 4: Cook the Chicken
Oven method (recommended):
- Preheat oven to 425°F (220°C).
- Place chicken pieces skin-side up on a baking rack over a foil-lined tray.
- Roast for 35-40 minutes until skin is golden and crispy and internal temperature reaches 165°F (74°C).
- Broil for the last 3-4 minutes for extra crispy skin.
Grill method:
- Grill over medium-high heat for 6-8 minutes per side until cooked through.
- Baste with any leftover marinade during the first half of cooking.
Step 5: Serve
- Rest the chicken for 5 minutes before serving.
- Garnish with fresh herbs and a squeeze of lemon.
- Serve with Persian saffron rice, flatbread, or a simple salad.
Tips for the Best Saffron Chicken
- Marinate overnight — the longer, the better. The yogurt tenderizes the chicken beautifully.
- Score the chicken — those cuts let the saffron marinade get deep into the meat.
- Don't waste the marinade — spoon any extra over the chicken before roasting.
- Use quality saffron — the golden color on the finished chicken comes entirely from the saffron. With Milizo Super Negin, the color is vivid and the aroma is unmistakable.
