If there's one dish that showcases saffron's magic better than any other, it's Persian Chelow — golden, fluffy rice with a gloriously crispy crust called tahdig. This is the dish that has made Iranian cuisine famous worldwide, and with Milizo's Grade A+ Super Negin saffron, you can make it at home with stunning results.
What is Chelow?
Chelow is the Persian term for plain white rice cooked using a special two-step method that produces incredibly fluffy, separate grains and a crispy golden crust at the bottom of the pot. The saffron is used to create a beautiful golden layer that tops the rice when it's flipped onto the serving plate.
Ingredients
Serves 4-6
- 2 cups long-grain basmati rice
- 25-30 threads of Milizo Saffron
- 3 tablespoons warm water (for blooming saffron)
- 3 tablespoons butter or ghee
- 2 tablespoons vegetable oil
- Salt to taste
- Water for parboiling
Instructions
Step 1: Bloom the Saffron
- Add 25-30 saffron threads to 3 tablespoons of warm water (not boiling).
- Let steep for 20 minutes until the water turns a deep golden-orange. Set aside.
Step 2: Wash and Soak the Rice
- Rinse basmati rice under cold water until water runs clear (about 5-6 times).
- Soak in cold salted water for at least 30 minutes (up to 2 hours for best results).
Step 3: Parboil the Rice
- Bring a large pot of well-salted water to a boil.
- Drain soaked rice and add to the boiling water.
- Cook for 6-7 minutes until rice is just barely tender but still has a slight bite.
- Drain and rinse with cold water to stop cooking.
Step 4: Create the Tahdig (Crispy Crust)
- Heat oil and 1 tablespoon of butter in the same pot over medium heat.
- Add 2-3 large spoonfuls of the parboiled rice and spread into an even layer — this becomes your tahdig.
- Mound the remaining rice on top in a pyramid shape.
- Use the handle of a wooden spoon to poke 5-6 holes through the rice to allow steam to escape.
- Place remaining butter on top of the rice mound.
Step 5: Steam the Rice
- Wrap the pot lid tightly with a clean kitchen towel (this absorbs excess steam).
- Cover the pot and cook on medium-high heat for 3-4 minutes.
- Reduce to the lowest heat and cook for 35-40 minutes.
Step 6: Add the Saffron
- Mix your bloomed saffron liquid with 2-3 large spoonfuls of the cooked white rice.
- This creates gorgeous golden saffron rice to garnish the top.
Step 7: Serve
- Place the serving plate upside down over the pot.
- Quickly and confidently flip the pot to release the rice onto the plate.
- The golden tahdig crust will be on top — a showstopper!
- Garnish with the saffron rice and serve immediately.
Tips for the Perfect Chelow
- Don't rush the soak — soaking the rice is key to fluffy, separate grains.
- Salt generously — the parboiling water should taste like the sea.
- Low and slow steam — resist the urge to lift the lid during steaming.
- Use enough saffron — with Milizo Super Negin, a little goes a long way. Those 25-30 threads will produce a stunning, vivid golden color.
Why Saffron Quality Matters Here
The saffron garnish is the crown jewel of this dish — it needs to be vibrant, deeply golden, and aromatic. Low-grade saffron produces a pale, weak color and almost no aroma. Milizo's Grade A+ Super Negin saffron delivers the intense golden hue and floral fragrance that makes this dish truly memorable.
