If Persian Saffron Rice is the crown jewel of Persian cuisine, then Khoresh — the slow-cooked stew served alongside it — is the heart. This saffron lamb stew is everything comfort food should be: rich, deeply aromatic, and so tender the meat falls apart at the touch of a spoon. The generous use of saffron gives it a gorgeous golden-amber color and a floral depth that sets it apart from any other stew you've ever tasted.
This is a dish worth making on a Sunday afternoon, filling your home with an incredible aroma all day long.
Ingredients
Serves 4-6 • Prep: 20 min • Cook: 2-2.5 hours
- 35-40 threads of Milizo Saffron
- 4 tablespoons warm water (for blooming)
- 1kg (2.2 lbs) bone-in lamb shoulder or leg, cut into large chunks
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 3 tablespoons olive oil or vegetable oil
- 1 teaspoon turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt (plus more to taste)
- 400ml (1 3/4 cups) lamb or beef stock
- 2 tablespoons tomato paste
- Juice of 1 lemon
- 2 tablespoons dried barberries (zereshk) or pomegranate molasses — optional but traditional
- Fresh parsley or mint for garnish
Instructions
Step 1: Bloom the Saffron
- Add 35-40 saffron threads to 4 tablespoons of warm water.
- Steep for 20-30 minutes for a deeply rich golden liquid. This stew deserves generous saffron.
Step 2: Brown the Lamb
- Pat the lamb pieces dry and season well with salt and pepper.
- Heat 2 tablespoons of oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
- Brown the lamb in batches for 3-4 minutes per side until deeply golden. Don't crowd the pan. Remove and set aside.
Step 3: Build the Base
- In the same pot, add the remaining oil and cook onions over medium heat for 15-20 minutes, stirring occasionally, until deeply golden and caramelized — this is the flavor foundation.
- Add garlic and cook for 1 minute.
- Add turmeric, cinnamon, cumin, and black pepper. Stir for 30 seconds until fragrant.
- Add tomato paste and stir for 1-2 minutes.
Step 4: Slow Cook
- Return the browned lamb to the pot.
- Pour in the stock and bloomed saffron liquid. Stir to combine.
- Bring to a boil, then reduce to the lowest heat. Cover and simmer for 1.5-2 hours until the lamb is completely tender and falling off the bone.
- Add lemon juice and barberries (if using) in the last 15 minutes. Adjust salt to taste.
Step 5: Serve
- The stew should be rich, thick, and a beautiful deep golden-amber color.
- Serve over Persian Saffron Rice (Chelow) with the golden tahdig crust for the ultimate Persian feast.
- Garnish with fresh parsley or mint.
Tips for the Best Saffron Lamb Stew
- Don't rush the onions — deeply caramelized onions are the secret to a rich, sweet base. Give them the full 15-20 minutes.
- Brown the lamb properly — those golden bits on the bottom of the pot add enormous flavor to the stew.
- Low and slow — lamb shoulder needs time to become tender. Don't be tempted to rush it.
- Use generous saffron — this is a big, bold dish that can handle a generous amount. Milizo's Super Negin gives you a vivid golden color and unmistakable aroma throughout the entire stew.
- Even better the next day — like most stews, this tastes even better reheated. Make it ahead for dinner parties.
Slow Cooker Version
After completing Steps 2 and 3, transfer everything to a slow cooker and cook on LOW for 7-8 hours or HIGH for 4-5 hours. Perfect for a hands-off approach.
