This saffron pan-seared fish is one of those recipes that looks and tastes far more impressive than the effort required. In just 20 minutes you get a beautifully golden, flaky fillet bathed in a fragrant saffron butter sauce that's light enough for a weeknight but elegant enough for guests.
Saffron and fish are a classic Mediterranean and Persian pairing — the floral notes of saffron perfectly complement the delicate sweetness of white fish without overpowering it.
Ingredients
Serves 4 • Prep: 5 min • Cook: 15 min
- 4 fillets of firm white fish (cod, halibut, sea bass, or snapper), about 170g (6 oz) each
- 20-25 threads of Milizo Saffron
- 3 tablespoons warm water (for blooming)
- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- Juice of 1 lemon
- 1/4 cup dry white wine or fish stock
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- Lemon slices for serving
Instructions
Step 1: Bloom the Saffron
- Add 20-25 saffron threads to 3 tablespoons of warm water.
- Steep for 15-20 minutes until the liquid is a deep golden-orange.
Step 2: Prepare the Fish
- Pat the fish fillets completely dry with paper towels — this is the key to a golden sear.
- Season generously on both sides with salt and black pepper.
Step 3: Sear the Fish
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until shimmering.
- Add fish fillets skin-side up and cook undisturbed for 3-4 minutes until a golden crust forms.
- Flip carefully and cook for another 2-3 minutes until the fish is just cooked through and flakes easily. Remove to a plate and tent with foil.
Step 4: Make the Saffron Butter Sauce
- Reduce heat to medium. In the same pan, add garlic and cook for 30 seconds until fragrant.
- Add white wine and let it simmer for 1-2 minutes, scraping up any golden bits from the bottom.
- Add the bloomed saffron liquid and lemon juice. Simmer for 1 minute.
- Remove from heat and swirl in the remaining 2 tablespoons of cold butter until the sauce is glossy and emulsified.
- Stir in fresh parsley.
Step 5: Serve
- Place fish fillets on plates and spoon the golden saffron butter sauce generously over the top.
- Garnish with lemon slices and extra parsley.
- Serve immediately with our Persian Saffron Rice or crusty bread to soak up the sauce.
Tips for Perfect Saffron Fish
- Dry the fish well — moisture is the enemy of a golden sear. Don't skip this step.
- Don't move the fish — let it cook undisturbed until it releases naturally from the pan for the best crust.
- Cold butter at the end — swirling in cold butter off the heat creates a silky, glossy sauce. Hot butter will break the sauce.
- Saffron quality matters — the sauce is delicate and light, so the saffron flavor really shines through. Milizo's Super Negin gives you a clean, vivid golden color and pure floral aroma.
Variations
- Creamy version — add 3 tablespoons of heavy cream to the sauce after the saffron for a richer, velvety sauce.
- Mediterranean style — add a handful of cherry tomatoes and olives to the sauce for a briny, Mediterranean twist.
- Shrimp version — swap the fish for large shrimp, cooking 2 minutes per side, for a stunning saffron shrimp dish.
