Saffron pasta is one of the most elegant yet effortless dishes you can make. In just 30 minutes, you get a restaurant-quality plate of silky, golden pasta that tastes as luxurious as it looks. This is the perfect recipe for impressing guests on a weeknight — or treating yourself to something special.
Ingredients
Serves 4
- 400g (14 oz) linguine or spaghetti
- 20-25 threads of Milizo Saffron
- 4 tablespoons warm water (for blooming saffron)
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 small shallot, finely diced
- 1 cup heavy cream
- 1/2 cup dry white wine (or chicken broth)
- 1/2 cup freshly grated Parmesan cheese
- Salt and white pepper to taste
- Fresh parsley for garnish
- Optional: pan-seared shrimp or scallops for a seafood version
Instructions
Step 1: Bloom the Saffron
- Add 20-25 saffron threads to 4 tablespoons of warm water.
- Steep for 15-20 minutes. The liquid will turn a deep, vivid golden-orange.
Step 2: Cook the Pasta
- Bring a large pot of well-salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Reserve 1 cup of pasta cooking water before draining — this is liquid gold for your sauce!
- Drain and set aside.
Step 3: Make the Saffron Cream Sauce
- In a large skillet, melt butter over medium heat.
- Add shallot and garlic, cook for 2-3 minutes until softened and fragrant.
- Add white wine and simmer for 2 minutes until slightly reduced.
- Pour in the bloomed saffron liquid and heavy cream.
- Simmer on medium-low for 4-5 minutes, stirring occasionally, until the sauce thickens slightly and turns a beautiful golden color.
- Season with salt and white pepper.
Step 4: Combine and Serve
- Add the drained pasta directly to the sauce and toss to coat.
- Add a splash of pasta water if needed to loosen the sauce to your desired consistency.
- Remove from heat and stir in Parmesan cheese.
- Serve immediately, garnished with fresh parsley and extra Parmesan.
Tips for the Best Saffron Pasta
- Save your pasta water — the starchy water helps the sauce cling to the pasta beautifully.
- Don't boil the cream — keep it at a gentle simmer to prevent the sauce from breaking.
- Add seafood — pan-seared shrimp or scallops take this dish to another level. Add them in at Step 4 before tossing with pasta.
- Quality saffron is everything here — the sauce's entire color and aroma comes from the saffron. Milizo's Super Negin delivers a vivid, restaurant-worthy golden sauce that lesser grades simply can't match.
Wine Pairing
This dish pairs beautifully with a crisp Pinot Grigio or a lightly oaked Chardonnay — wines that complement saffron's delicate floral notes without overpowering them.
