This saffron honey cake is the kind of recipe you'll make over and over again. It comes together in one bowl, bakes in about 35 minutes, and produces a moist, golden cake with a depth of flavor that tastes far more sophisticated than the effort involved. The combination of saffron's floral notes and honey's natural sweetness is simply magical.
It's perfect for afternoon tea, a light dinner party dessert, or an everyday treat with a cup of saffron tea.

- 120ml (1/2 cup) vegetable oil or melted butter
- 3 large eggs, room temperature
- 120ml (1/2 cup) plain yogurt or sour cream
- 1 teaspoon vanilla extract
- 220g (1 3/4 cups) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cardamom
Optional Honey Glaze
- 3 tablespoons honey
- 1 tablespoon warm water
- A pinch of saffron
Instructions
Step 1: Bloom the Saffron
- Add 20-25 saffron threads to 3 tablespoons of warm water.
- Steep for 20 minutes until deeply golden. Set aside.
Step 2: Mix the Batter
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
- In a large bowl, whisk together honey, oil, eggs, yogurt, vanilla, and the bloomed saffron liquid until smooth and golden.
- Add flour, baking powder, baking soda, salt, and cardamom directly to the bowl.
- Whisk until just combined — a few small lumps are fine. Do not overmix.
Step 3: Bake
- Pour batter into the prepared pan and smooth the top.
- Bake for 33-38 minutes until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack.
Step 4: Optional Honey Saffron Glaze
- Mix honey and warm water with a pinch of saffron.
- Brush generously over the warm cake for a glossy, fragrant finish.
Tips for the Best Saffron Honey Cake
- Use good honey — the honey flavor is prominent here, so use one you love. Wildflower or orange blossom honey work beautifully with saffron.
- Don't overmix — mix until just combined for a tender crumb.
- Check early — ovens vary. Start checking at 30 minutes.
- The glaze is worth it — it adds a gorgeous sheen and intensifies the saffron honey flavor on the outside of the cake.
