These saffron cookies are deceptively simple — just a handful of pantry ingredients transformed by a small pinch of Milizo saffron into something truly special. Golden in color, floral in flavor, and buttery in texture, these cookies disappear fast. They're the perfect treat to share with someone who's never tried saffron before.
Ingredients
Makes 24 cookies • Prep: 20 min • Bake: 12-14 min
- 20-25 threads of Milizo Saffron
- 2 tablespoons warm water (for blooming)
- 225g (1 cup / 2 sticks) unsalted butter, room temperature
- 150g (3/4 cup) granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 280g (2 1/4 cups) all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground cardamom
- Optional: 2 tablespoons crushed pistachios for topping
Instructions
Step 1: Bloom the Saffron
- Add 20-25 saffron threads to 2 tablespoons of warm water.
- Steep for 20 minutes until the liquid is a deep, vivid golden-orange.
Step 2: Make the Dough
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Beat butter and sugar together until light and fluffy, about 3 minutes.
- Add egg yolk, vanilla, and the bloomed saffron liquid. Mix until combined — the dough will turn a beautiful golden color.
- Add flour, salt, and cardamom. Mix on low until just combined. Do not overmix.
Step 3: Shape the Cookies
- Roll the dough into 1-inch balls and place on the prepared baking sheets, spacing 2 inches apart.
- Flatten each ball slightly with the bottom of a glass or your palm.
- Optional: Press a few crushed pistachios into the top of each cookie for a beautiful finish.
Step 4: Bake
- Bake for 12-14 minutes until the edges are just lightly golden. The centers may look slightly underdone — that's perfect.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack. They firm up as they cool.
Tips for Perfect Saffron Cookies
- Don't overbake — these cookies continue to cook on the hot pan after you take them out. Pull them when the edges are just set.
- Room temperature butter — cold butter won't cream properly and will affect the texture.
- Bloom fully — a full 20-minute bloom ensures the saffron color and flavor fully infuse the dough.
- Pistachio topping — the green of the pistachios against the golden cookie is stunning and adds a lovely crunch.
Storage
Store in an airtight container at room temperature for up to 5 days — if they last that long! These also freeze beautifully for up to 2 months.
