By now you've probably seen the viral Dubai chocolate bar — that irresistible combination of silky chocolate, crispy kunafa pastry, and rich pistachio cream that took social media by storm. We've taken this sensation and elevated it with a golden saffron infusion that adds a floral, luxurious depth that makes it taste like it came straight from a five-star Dubai hotel.
The best part? You can make it at home in about 45 minutes.
What Makes This Dubai Saffron Chocolate Special
The original Dubai chocolate bar is already extraordinary — the contrast between snappy chocolate shell, crispy shredded pastry, and creamy pistachio filling is unlike anything else. Adding Milizo saffron to the pistachio cream takes it to another level entirely, giving it a golden color and a floral, slightly honeyed aroma that pairs beautifully with the nuttiness of the pistachios and the richness of the chocolate.
Ingredients
Makes 8-10 bars • Prep: 20 min • Chill: 25 min
Chocolate Shell
- 400g (14 oz) good quality dark or milk chocolate, chopped (or chocolate chips)
- 1 tablespoon coconut oil (for shine)
Saffron Pistachio Kunafa Filling
- 20-25 threads of Milizo Saffron
- 2 tablespoons warm water (for blooming)
- 150g (about 2 cups) kataifi/kunafa pastry (shredded phyllo dough, found in Middle Eastern grocery stores)
- 3 tablespoons unsalted butter
- 200g (3/4 cup) pistachio cream or pistachio paste
- 2 tablespoons tahini (optional, adds depth)
- 2 tablespoons powdered sugar
- Pinch of cardamom
Instructions
Step 1: Bloom the Saffron
- Add 20-25 saffron threads to 2 tablespoons of warm water.
- Steep for 20 minutes until deeply golden.
Step 2: Toast the Kunafa
- Roughly chop the kataifi pastry into smaller pieces.
- Melt butter in a skillet over medium heat.
- Add the kataifi and toast, stirring frequently, for 5-7 minutes until golden and crispy.
- Remove from heat and let cool completely. This is crucial — hot filling will melt your chocolate.
Step 3: Make the Saffron Pistachio Cream
- In a bowl, mix together pistachio cream, tahini, powdered sugar, cardamom, and the bloomed saffron liquid.
- Stir until smooth and golden. Taste and adjust sweetness.
- Fold in the cooled toasted kunafa. The filling should be thick and hold its shape.
Step 4: Make the Chocolate Shell
- Melt chocolate and coconut oil together in a heatproof bowl over a pot of simmering water (or microwave in 30-second intervals), stirring until completely smooth.
- Pour a thin layer of melted chocolate into the bottom of a chocolate bar mold or a lined loaf pan.
- Tilt to coat the sides as well if using a mold.
- Refrigerate for 10 minutes until set.
Step 5: Fill and Seal
- Spoon the saffron pistachio kunafa filling into the chocolate shell, pressing gently.
- Pour the remaining melted chocolate over the top to seal completely.
- Tap the mold gently to remove air bubbles.
- Refrigerate for 15-20 minutes until fully set.
Step 6: Unmold and Serve
- Carefully unmold or lift out of the pan.
- Optional: dust lightly with gold luster dust for that extra Dubai glamour.
- Slice with a sharp knife to reveal the gorgeous golden filling inside.
- Serve at room temperature for the best snap and texture.
Tips for the Best Dubai Saffron Chocolate
- Find kataifi pastry at Middle Eastern, Mediterranean, or specialty grocery stores. It's usually in the frozen section. You can substitute crushed shredded wheat biscuits in a pinch.
- Cool the kunafa completely before mixing with the pistachio cream, or the filling will become too soft.
- Temper your chocolate if you want a professional snap and shine. For a home version, adding coconut oil achieves a similar effect.
- Don't skimp on saffron — the golden color running through the pistachio filling is part of what makes this so visually stunning. Milizo's Super Negin gives you that rich, vivid gold.
Variations
- White chocolate version — use white chocolate for the shell to let the golden saffron filling really pop visually.
- Bark version — spread the chocolate on a lined baking sheet, dollop the filling on top, swirl, and chill for an easy no-mold version.
- Gift version — wrap individual bars in gold foil and tie with a ribbon for a stunning edible gift.
